| Hot weather and ice cream; a match made in heaven. The nipper and I have been ploughing through a load of home made ices recently. Everything from a plain old vanilla to a trendy yoghurt ‘semi freddo' have been experimented with and enjoyed.
Something we like to do with an old banana is peel it, freeze it then whiz it up in a blender with a little milk for an amazing instant banana ice cream. No added sugar, no eggs, it is impressive and simple and also an early lesson in frugality. Just because the banana has gone black it doesn't mean the bin. The same applies with all fruit. Once it gets a bit bruised get it into the blender; waste not want not. Soup this idea up with the addition of some nuts. A couple of handfuls of pistachios blended to a rough powder before folding in gives it a lovely green haze and of course a lovely nutty taste. Quick Banana and Pistachio Ice 2 over-ripe bananas 1 - Peel the bananas and place into a freezer bag. Freeze until solid, approximately 2 hours. |
