Wild Mushroom and Thyme Soup with Black Bream


Wild Mushroom and Thyme Soup with Black Bream
Serves 4

1kg wild mushrooms, either single variety or mixed
4 tbsp olive or rapeseed oil
1 onion, peeled and sliced
1 whole clove of garlic, unpeeled
2 tbsp fresh thyme leaves
1 litre vegetable stock
150ml single cream or crème fraiche
2 fillets of black bream
Salt and pepper

1 – Roughly chop up the mushrooms. Heat the oil in a large pan and add the mushrooms, onion, garlic clove, thyme and a good grinding of fresh black pepper. Cook off until the water has evaporated and the mushrooms are beginning to caramelise.
2 – Pour in the stock. Bring to the boil then simmer for 10 minutes. Remove the garlic clove.
3 – Pour into a blender and puree until you have a smooth consistency.
4 – Return to a clean pan and pour in the cream or crème fraiche. Bring to the simmer and stir thoroughly. Taste for seasoning.
5 – Slice the fillets into 2 pieces. Season. Heat up a little olive oil in a pan and add the fish skin side down. Cook for 3-4 minutes until the skin is golden. Turn and cook for a further minute. Place a piece of fish into the soup and serve.

Hi David, I'm sorry you had such a rubbish week - I can't believe someone broke into your car in a school! I sympathise with you about the plagiarism too, it's happened to me few times and it drives me crazy.

Good news about flavour though! Great to hear you are still celebrating the local ingredients. Can you take a peek at my British One Hundred when you get a chance? I want to know which Northern delicacies I have missed!

Bummer of a week eh matey ? Blow with the car stuff too (little scrotes).....less said about the NUFC circus the better.....don't know what to think anymore.....St Albans FC anyone ??

I'm sorry you had such a rubbish week - I hope the next one is better! Especially about the broken-in-car and plagerism - which is so annoying when you have worked to cook it, photograph it, type it and post it!

I've made soup tonight for the first time after the 'summer break', as autumn seems to be just around the corner now and I'm full of cold. I really like the sound of your recipe.

That is a terrible week, I could hardly believe the news when I saw the weather you'd been having. (My OH's from Newcastle, so we watched both the weather and the footie stuff with interest!)

This is a delicious sounding soup - I'll get the inlaws to find me a copy of Flavour!

How's it going young man? That definitely qualifies as a shitty week. You got through it though. We're across in the homeland for the annual Murphy get together so lots of eating and drinking no doubt.Great news about the mag. No doubt you'll be kept busy with that. Be good.
