Wild Mushroom and Thyme Soup with Black Bream
Wild Mushroom and Thyme Soup with Black Bream
Serves 4
1kg wild mushrooms, either single variety or mixed
4 tbsp olive or rapeseed oil
1 onion, peeled and sliced
1 whole clove of garlic, unpeeled
2 tbsp fresh thyme leaves
1 litre vegetable stock
150ml single cream or crème fraiche
2 fillets of black bream
Salt and pepper
1 – Roughly chop up the mushrooms. Heat the oil in a large pan and add the mushrooms, onion, garlic clove, thyme and a good grinding of fresh black pepper. Cook off until the water has evaporated and the mushrooms are beginning to caramelise.
2 – Pour in the stock. Bring to the boil then simmer for 10 minutes. Remove the garlic clove.
3 – Pour into a blender and puree until you have a smooth consistency.
4 – Return to a clean pan and pour in the cream or crème fraiche. Bring to the simmer and stir thoroughly. Taste for seasoning.
5 – Slice the fillets into 2 pieces. Season. Heat up a little olive oil in a pan and add the fish skin side down. Cook for 3-4 minutes until the skin is golden. Turn and cook for a further minute. Place a piece of fish into the soup and serve.

Hi David, I'm sorry you had such a rubbish week - I can't believe someone broke into your car in a school! I sympathise with you about the plagiarism too, it's happened to me few times and it drives me crazy.
Good news about flavour though! Great to hear you are still celebrating the local ingredients. Can you take a peek at my British One Hundred when you get a chance? I want to know which Northern delicacies I have missed!
That is a bad week. Though Keegan leaving not unexpected.
Nice recipe!
David, it's soon soup time over here and 'shrooms are one of my faves.
Bummer of a week eh matey ? Blow with the car stuff too (little scrotes).....less said about the NUFC circus the better.....don't know what to think anymore.....St Albans FC anyone ??
Lovely looking fish soup though......Flavour mag link all to cock though.
See you soon.....hopefully.

I'm sorry you had such a rubbish week - I hope the next one is better! Especially about the broken-in-car and plagerism - which is so annoying when you have worked to cook it, photograph it, type it and post it!

How exciting this is, David. I just did a quick search of Flavour online, and it looks fantastic. As for the soup, I just love the combo of mushrooms and savory thyme. Sounds so hearty!
I'm sorry you've had such a rotten week. Great looking soup though.
Congrats with the new mag.
It really was a rotten week. I had not thought I was supertitious but luck seems to run in 3's. So now you're due for 3 good things to happen. One of course is the magazine. Congratulations once again if I haven't already said it:D
Now that definitely wasn't a good week... Onwards and upwards, with good things to come. Congrats on Flavour magazine.
David, sorry to hear you've had such a rotten week. I guess the old saying 'it never rains but it pours is right' (literally in this case).
I've made soup tonight for the first time after the 'summer break', as autumn seems to be just around the corner now and I'm full of cold. I really like the sound of your recipe.
What a horrible week you had David. I am sending you a hug!
What an interesting soup! I'll have to try it sometime.
That is a terrible week, I could hardly believe the news when I saw the weather you'd been having. (My OH's from Newcastle, so we watched both the weather and the footie stuff with interest!)
This is a delicious sounding soup - I'll get the inlaws to find me a copy of Flavour!
Dont forget the mud at Wolsingham Show and turning up in your "city boy trainers!"
But your food was still fabulous!
Another lovely meal David! Your food is the kind of food I would love to eat in a good British restaurant, it looks so fabulous.
That is a really crap week. I am so sorry.
(apart from the Keegan bit)
I have been taking a blog-break for a month - but am back and came straight back to see your wonderful blog.
How are you?
xxxx
What a horrific week. So very glad that it ended well and I most definitely will keep an eye out for it next time I'm down your way.
Hoping your weekend is going well!
How's it going young man? That definitely qualifies as a shitty week. You got through it though. We're across in the homeland for the annual Murphy get together so lots of eating and drinking no doubt.Great news about the mag. No doubt you'll be kept busy with that. Be good.
Just what the dr ordered for this cooler climate here in the U.K. a wonderful bowl of your homemade soup! Looks delicious David :)

What a soothing idea - fish fillets in mushroom (and thyme) soup! Some comments mention the magazine Flavour - is that connected to the one published in Bristol?
Hi Elisabeth
Spot on! It is connected to the one in Bristol and Bath, now expanded to the North East area. Hope you enjoy it!
Cheers
David
Ah, a simply wonderful combination! I am salivating as I type... Good luck with the magazine as well, looks promising!
Hey Dave long time
How the hell did you find out you were ripped off with your recipes?
